Almond nib and Cheese Pretzels





Yield: 12 pcs

1 1/2 cup warm water
1 tbsp brown sugar
2 tsp kosher salt
2 1/4 tsp yeast
4 1/2 cups APF
4 tbsp melted butter

Baking soda water bath:
5 cups water
1/3 cup baking soda

Egg Wash:
1 egg yolk
1 tbsp water

Topping:
Course salt  
sugar + almond nibs
Cheddar cheese

1. Combine water, sugar, salt in a mixing bowl till sugar and salt dissolve. Sprinkle yeast on top.
Allow to sit for 5 mins till foam.
2. Add flour and butter and knead till it form a pliable dough.
3. Preheat oven to 225C. Line baking sheet with parchment paper.
4. Combine water + soda in a pot. Bring to boil.
5. Turn dough onto a clean work surface. Roll dough into 24 cm rope and roll into a U shape.
Holding the end of the rope, cross them over each other twice and press onto the bottom of the
U in order to form the shape Pretzel. Place onto the prepared baking sheets.
6. Gently lower the pretzel into the soda solution for 30 secs.
7. Brush the top of pretzel with egg wash and sprinkle the topping.
8. Bake till golden brown about 12 to 14 mins
9. Brush with butter....

Best Char Siu


4 tbsp soy sauce
1 tbsp oyster sauce
2 tbsp sweet soya sauce
2 tbsp shaoxing wine
3 tbsp sugar
2 tbsp honey
minced garlic & shallot-100g
1 tbsp hoisin sauce
1 kg meat (shoulder or belly)
1/4 tsp salt

1. Blanch pork with hot water
2. Marinade pork for 1 hour
3. Fry garlic & shallot till golden and add in marinated pork together with the marinade.
4. Cook for 20 mins, lower heat till meat is cooked
5. Once meat is done, pop it into the oven (5-10 mins) to caramelize and crust up the char siu.
6. Boil the remaining sauce till thickened and spread on top of the sliced char siu.

 Dough

 500g all purpose flour   

Pinch of salt

240g unsalted butter   

1/2 cup plus 2 tablespoon cold water


Fillings:

450g ground beef /minced beef

1 large potato(diced)

1 carrot(diced)

1/2 teaspoon each Curry Thyme Chilli Garlic powder

1/4 teaspoon salt

1 seasoning cube

2 tablespoons flour

3/4 cup water

1. Heat up oil, fry chop onions

2. Add ground meat, curry, thyme, chilli, garlic powder, mix and cook...

3. Add potato, carrot,, flour, water, simmer till soft...leave to cool

4. In a bowl, add flour, salt, butter, mix with finger tips till crumbly.

5. Add water bit by bit till become a dough.

6. Divide dough into 2 portions and cover with cling wrap for 30 mins and put in the fridge.

7. Out from fridge cut dough into parts and roll out the dough-use a round cutter. Put a tbsp of meat and fold the half. Use a fork to print the edges. Pork holes on the top part with a fork.

8. Lay on a greased tray, brush with egg wash(1 egg yolk + 1 tsp water)

9. Bake at 190c for 35 mins.

 A)    180g rice flour

50g sago powder

150ml water

 

B)    350ml water

160g caster sugar

 2 pandan leaves

200ml thick coconut milk

1/8 teaspoon fine salt

 Red pigment

 orange pigment method:

1. Mix material A, then sieve, stir well, rest for 1 hour

2. Put material B into a pot and boil until the sugar dissolves, remove the pandan leaves, turn off the heat and let cool for later use.

 3. Mix ingredients A and B, then add 200ml thick coconut milk and 1/8 teaspoon fine salt and mix well

4. Filter the powder slurry and divide it into two parts (500ml and 400ml).

 5. Add red pigment to 500ml batter and mix well

6. Coat an appropriate amount of cooking oil on a 7X7 inch mold, put the mold in a steamer to heat, pour a layer of white batter (100ml) and steam for 5 minutes on medium-high heat. 7. Open the lid once every few minutes and wipe off the water on the lid to prevent water vapor from falling into the surface layer.

8. Pour the second layer of red batter (100ml), steam for 5 minutes, and repeat until the eighth layer of batter.

9. Add 1 drop of orange pigment to the last layer of red batter and steam for 15 minutes

10. Wait for it to cool completely (about 4-6 hours), then slice and enjoy.

 

Tips: 1. Touch the batter layer with your fingers. If the batter is not sticky, it means the batter is cooked. Generally, the batter can be steamed in about 4-5 minutes.

 2. Open the lid every 5 minutes, and remember to dry the lid after opening the lid. The water on the surface is beneficial to the smoothness of the surface.

3. The batter should not be steamed for too long each time. The stickiness between layers is very poor and it is more difficult to stick together. That is to say, the layering will be more serious. We have to make it stick together and tear it off. So 4-5 minutes is just right.

Moist Banana Cake




600g banana, mashed

115g sugar(reduced amt)

200g flour

1/2 cup oil

2 egg (A)

1 1/2 tsp b. soda

1 tbsp vanilla essence

1.    Sieve flour, soda, salt and sugar, mix well

2.    Beat eggs and mashed banana, add oil essence

3.    Fold in flour, mix well

4.    Pour into greased pan(am using 7x3 ), yield 2 loaves

5.    Bake at 180c for 50-55 mins
