6 egg yolks
3/4 cup castor sugar
2/3 cup milk
1 1/4 cup heavy cream
1/2 tsp vanilla
1/4 cup strong coffee
2 tbsp rum(optional)
1 pkt ladyfinger cookies
1 tbsp cocoa powder
In a saucepan, whisk together egg yolk and sugar till well blended. Whisk in milk and cook over medium heat, stirring constantly, until mixtures boils. Boil gently 1 min, remove and allow to cool. Cover and chill for 1 hr.
Beat heavy cream until stiff peak.
Whisk cheese into yolk mixture till smooth.
In a bowl combine coffee. Split ladyfingers in half lengthwise and drizzle with coffee mixture.
Arrange half of soak ladyfinger in bottom of 8 x8 in pan. Spread half of cheese mixture over the ladyfinger, then half of whipped cream over the cheese. Repeat layers and springkle with cocoa. Cover and refrigerate 4 to 6 hrs till set.
